For the sauce:
1/4 cup water
3 TBSP olive oil
3 TBSP vinegar (or lemon or lime juice)
1 TBSP tomato paste
1/4 tsp cayenne or chili powder
hot sauce (optional)
1 tsp fresh basil, chiffonade (~1/4 tsp. dried) (optional)
1# chicken wings
Prepare sauce: Over medium heat in a saucepan bring sauce ingredients, excluding basil to boil. Let simmer for 5 minutes, stirring regularly. Remove from heat, add basil. Stir, add lemon/lime juice to taste.
Grill wings until the skin is crispy and the wings are cooked through (you may want to parboil them).
[If you don't have a grill or it's dead cold out: Heat oven to 400F. Roast chicken wings 20-30 minutes until crispy and cooked through. You'll know they're ready when they don't stick to the pan.]
Coat wings with sauce. Eat now or return to cooling oven for 10 minutes to bake sauce on.
You can add more or less cayenne/chili powder to heat things up or not. If there is a particular flavor of hot sauce you like, you can use that. I like Tapatio, personally. Again add that to taste. But careful, add, stir a bit then taste. It’s easy to overheat, hard to undo.
The basil adds a bit of freshness to the sauce, I think. It is completely optional.
