Paleo Pancakes

½ cup almond meal
2 eggs
2 tbs applesauce
2 tsp lemon juice (or other flavor*)
Coconut oil

Place ingredients (except for the coconut oil) in a bowl and
combine well. Put a decent amount of coconut oil in a frying pan on medium-low heat, and then place a scoop of pancake mixture into the
frying pan. Cook for about 1 minute before flipping over and cooking for a further minute on the other side.

*Other flavor choices: coffee, fruit juices, vanilla (or other) extracts [1tsp extract, water], cocoa or carob powder [mixed w/water], use your imagination.

Top with coconut oil instead of butter and honey or agave syrup.

While tasting almost nothing like pancakes, this will satisfy my bread craving on a weekend morning when I think I should be having pancakes. I recommend a strong flavor to hid the ubiquitous almond meal/egg flavor.
