2 sweet potatoes
2 TBSP olive oil
1/4 tsp (or more) cayenne or chili powder
salt and pepper to taste
Preheat oven to 400.
Peel sweet potatoes, cut into wedges. In a bowl combine all ingredients. Coat potatoes well. On a baking sheet, arrange potatoes in a single layer. Bake until ends are crispy and potato is cooked through, about 30 minutes.
I’m not a huge fan of sweet potatoes, but when I’m craving a potato-ey side, this is a good alternative. You can, of course, add all sorts of herbs, cumin, coriander and fennel are all great choices.
