Stewed Okra & Tomatoes

A super-simple open and dump recipe:

1 bag frozen okra
1 can Rotel (pick your own heat)
1 can diced tomatoes

Place ingredients in saucepan. Heat on medium until warmed through, stirring occasionally.

If you want to do some actual cooking, you can dice up some peppers and bell peppers and onions and tomatoes yourself.

Not being from the South, I didn’t know quite what to do with the bag of frozen okra I bought on a whim. This turned out quite well. Okra is a bit hairy, reminiscent of a peach, which I’m not overly fond of (and that’s why I eat nectarines, not peaches), and it has that sticky stuff when you’re stirring it, which is kinda weird.  Liked it though, and it was a change of pace from my normal veggies.
