Possibly the most useful utensil in the kitchen, next to a good knife, is a pair of spring-loaded tongs. Make sure they are spring-loaded! The salad tongs and those X-shaped ones are useful for salad, but not for cooking. These things toss and stir, they grab food and pans, they are a hand that can touch all those hot things for you. Get them, use them, love them.
It’s hard to find a pair of tongs that aren’t locking anymore. I prefer the non-locking models, like in the picture, but the locking ones only take a few uses to get the hang of and they aren’t lolloping across your drawers and sinks like the non-locking ones.
I prefer the 12″ version. The 9″ leave you a bit too close to hot food and pans, and with the 16″ ones your food is a long ways out creating torque that dumps it on the ground or floor at the most inconvient times. The 16″ are for reaching across large grills only.
